The Fair of the Vineyards of Aix is a good opportunity to discover and taste its wines. The fair takes place each year on the last Sunday in July on the Cours Mirabeau.
With a grand reputation, this vineyard, grouping 49 communes and extending over 3500 hectares,
benefits from a soil particularly favourable to the production of excellent red wines.
The infinite
variety of vines (grenache, syrah, cabernet sauvignon, and notably vermentino) and the quality
of their assemblage makes for very light and aromatic young wines but also for wines of
character and importance. The rosés which come from these varieties of grape are more tannic, vigorous and go well with dishes such as aioli (fish and vegetables with garlic mayonnaise), bourride (white fish stew), brandade de morue (cod puree) or poutargue (mullet roe caviar). Less abundant, the whites are fresh and perfumed.

Each year, among over 200 wines from the vineyards of Aix-en-Provence, the vintage rewards the town with the best of whites, rosés and reds.

THE APPELLATION OF PALETTE WINES, given to those produced by two estates is the most
ancient. It is situated in the communes of Tholonet and Meyreuil.
