Union des Fabricants du Calisson d'Aix (UFCA)

Formed on June 19, 1990, the Union des Fabricants du Calisson d'Aix-en-Provence (UFCA), today chaired by Laure Pierrisnard, is the Organisme de Défense et de Gestion (ODG) responsible for the “recognition” of the Indication d'Origine Protégée (Protected Designation of Origin), a process undertaken with the Institut National des Appellations d'Origine (INAO) to obtain recognition of the IGP “Calisson d'Aix-en-Provence”. Indeed, the Union des Fabricants de Calisson d'Aix (UFCA) has set itself the mission of safeguarding the image of the Calisson d'Aix. Since its creation, the UFCA has worked tirelessly to protect this name, which is symbolic of the culinary heritage of the Bouches-du-Rhône region and, more specifically, of the town of Aix-en-Provence.
The PGI will contribute to the recognition of the know-how of the “calissonniers” of Aix-en-Provence, passed down from generation to generation in the historic confectioneries and patisseries of Aix-en-Provence. The reputation of this expertise not only among the people of Aix-en-Provence, but also throughout France and Europe, is well established.
